Simple sous vide chicken breast

This is my master recipe for chicken breast and looks at a few of the considerations you should have in mind as you cook it.

For the temperature, I prefer 141°F (60.6°C) which results in a texture like very tender "normal" chicken. Sous vide chicken breasts are safe as low as 136°F (57.8°C) but then they are a little too raw-tasting for me. For a more traditional, semi-dry chicken breast I recommend 147°F (63.9°C) but I find them a little too dry for my taste.

Ingredients for Simple Sous Vide Chicken Breast

    1 chicken breast

Cooking Instructions for Simple Sous Vide Chicken Breast

Preheat the water bath to your desired temperature.

Salt and pepper the chicken breast and add any seasoning rub you prefer, then seal in a sous vide bag. Place the sous vide bag in the water bath and cook for 2 to 4 hours, until pasteurized.

Take the sous vide bag out of the water bath and remove the chicken from the bag. Dry it off thoroughly with a paper towel or dish cloth. Quickly sear the chicken for 1 to 2 minutes per side, until just browned, then remove it from the heat and place onto a plate with any salads or sides.
