Sous Vide Steelhead with Lemon Pesto Mayo Recipe

Ingredients for Sous Vide Steelhead with Lemon Pesto Mayo

  • For the Fish

  • 8-12 oz piece of Steelhead
  • Salt and pepper
  • 1/4 cup mayo (I like Duke's)
  • 1 tbsp pesto
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt

Cooking Instructions for Sous Vide Steelhead with Lemon Pesto Mayo

For the Fish

• Preheat water bath to 119 degrees F.

• Season steelhead lightly with salt and pepper. Vacuum seal using a handheld vacuum sealer or the manual setting on your vacuum sealer to protect the steelhead.

• Cook for 30 minutes in preheated water bath.

• While the steelhead is cooking, mix together mayo, pesto, lemon juice, and 1/4 tsp salt in a small bowl.

• Remove steelhead from bath and bag and pat dry with paper towels. Preheat the broiler in your oven.

• Line a baking sheet with foil. Place steelhead on top of the foil. Cover the steelhead with the mayo mixture.

• Broil for 2-5 minutes, until mayo starts to bubble and brown. Watch carefully to avoid overcooking!

• Serve
