When people get their sous vide machine for the first time they are often stumped about what to cook first. There's a few great staples people recommend, like 72 hour short ribs, low temperature salmon, pork tenderloin or a nice steak! But a lot of it really comes down to what type of food you like.
Throughout the Exploring Sous Vide course I'm going to be giving you lots of tips and tricks for successful sous vide. I will also be pointing you to specific recipes that help illustrate them, as well as some of my all-time favorite recipes. But first, I wanted to provide you with this page that can act as a guide to helping you find the type of foods you want to try cooking. Hopefully you can reference it, and the recipes it links to, as you go through the course.
What to Sous Vide First?
A top question people ask is "What should I sous vide first?". There's lots of answers to this question, and I've put together some of the more common ones in my What Should I Sous Vide First? article.
Three of my favorite sous vide recipes to get started are listed below. They are all simple and easy to make, and really showcase the difference sous vide makes with the meat.
If you are looking for a specific type of food to cook, you can view the Sous Vide Recipe Filters to narrow down what you are looking for. There are a lot of popular categories listed, or you can type in your own search criteria. Some of my favorite sous vide categories are listed below.
In sous vide there is a ton of focus on steak, chicken, pork, and other meats. This means sous vide vegetables are often forgotten. That's a shame since there are many great ways you can use sous vide to cook vegetables. I have a full list of sous vide vegetable recipes and have listed a few of my favorites below.
Everyone knows you can cook meat and vegetables with sous vide, but there are several other uses for it. From desserts and sweets to savory soups and infusions, sous vide is a really versitile method of cooking.
