Sous Vide Raspberry Gel Recipe

Sous Vide Raspberry Gel Recipe

  • Cooks: 145.4°F (63°C) for 2 hours
  • Serves: 20

Ingredients for Sous Vide Raspberry Gel

    200g fresh raspberries
  • 5g bourbon
  • 17g apple juice
  • 10g Ultratex 3

Cooking Instructions for Sous Vide Raspberry Gel

Combine ingredients except for Ultratex in a sous-vide pouch and seal.

Cook at 145.40°F (63°C) for 2 hours.

Strain mixture through a fine meshed sieve into a small container.

Add Ultratex and mix with a hand blender until well incorporated and a gel consistency. Reserve chilled in a pastry bag.
