How to Sous Vide Pork Rib Roast
Rib roast is great when cooked to either medium-rare 135°F (57.2°C) or medium 140°F (60°C). Many people prefer pork well done, if you fall into this category then I suggest trying 145°F (62.8°C) for your starting point. At any of these temperatures, your rib roast will have a chop-like texture in 5 to 8 hours when the meat is slightly tenderized.
