How to Sous Vide Radish
There are a lot of variety of radishes, but most are tender after 10 to 25 minutes in a 183°F to 185°F (83.9°C to 85°C) water bath. Some sous vide radishes are very tender and need an even shorter cooking time, while some can be tough and woody and will take longer to fully break down. They are often diced or sliced before they are added to the sous vide bag in a single layer to make sure they cook evenly. However some of the smaller ones can be done whole.
