How to Sous Vide Pineapple

Figuring out how long to sous vide pineapple depends a lot on your final preparation. If you just want to heat it through, then it will only take 20 to 30 minutes if it is cut into cubes or rounds. If you really want to tenderize it and break it down then 45 to 60 minutes may be required. It is usually cooked at 167ºF (73.8°C) if you want it to still retain a lot of structure, or 183°F to 185°F (83.9°C to 85°C) if you want the pineapple really tenderized.
