How to Sous Vide Lamb Loin Roast
Lamb loin is already very tender so it just needs to be heated through . I prefer my lamb medium-rare so I tend to cook it at 131°F to 135°F (55°C to 57.2°C) but if you cook it for 3 hours or less you can go a little bit lower for a rare lamb loin. Some people prefer their lamb medium done, if so, 140°F (60°C) might be a good temperature to try.
