For a chop-like texture, if you prefer a ham roast cooked medium-rare try 135°F (57.2°C), or medium up the temperature to 140°F (60°C). Like to eat ham cooked well done? Then 145°F (62.8°C) is the temperature to use. Regardless of your selection, they all need to be sous vided for 10 to 20 hours.
