How to Sous Vide Fennel
I really enjoy sous vide fennel and usually cook it for 30 to 60 minutes at 183°F to 185°F (83.9°C to 85°C). You can cook it whole, or cut in half and it'll be on the longer end of the time range. If you dice or cube it it'll tenderize more quickly. You can also vary the time depending on if you want it to be super tender, or just softened some.

My next experiment was with a sous vide fennel fondant and it turned out great. The recipe is very simple and very tasty, and is easy to make vegetarian.
Fennel cooked sous vide becomes very tender in just 60 minutes and retains the majority of its flavor. This recipe adds orange zest, cloves and saffron to the bag before cooking for more interesting flavor levels. Cooking the fennel with a large dose of olive oil confits the
fennel, the excess olive oil can be used on other
dishes or in vinaigrettes.
