How to Sous Vide Beets
I usually cut beets into 1/2" to 1" cubes, or slice them into rounds, and place them in a single layer in the bag. Then I cook them at 183°F to 185°F (83.9°C to 85°C) for 60 to 90 minutes, until tender.
The main determining factor when deciding how long to sous vide beets is the size of the pieces you are using. Whole beets will take a lot longer than 1/2" to 1" pieces. Earthy beets are a great combination with bright oranges and rich goat cheese. It is rounded out with some sweet balsamic vinegar and woody toasted walnuts. Beets work great with sous vide and turn out tender without drying out any.
When cooking sous vide beets it tenderizes them without turning them mushy and this recipes combines them in a walnut and blue cheese salad with Mandarin oranges.
