Creamed Spinach Reciepe

I'm doing my summer cook out for all the guys, rib roast, duck fat potatoes ....
I was thinking a "classic" creamed spinach would be nice sous vide.
I know I would blanch first, then assemble the usual suspects and sous vide .... I don't have time to experiment, any advise will be taken (and eaten) !

since the actual cooking only takes, what?, ten mins or so? to make creamed spinach in a pan, I'm not sure why sous vide would be a plus?
I'm wanting to do as much the 2 days ahead as possible, I was hoping to hear that sous vide creamed spinach is the best ever !
I can always cook conventionally, vacuum seal, and just reheat sous vide in a back room, not to heat the place up before service.
