Sous vide catering cooking

I am interested in incorporating sous vide into my catering repertoire. Does anyone know what the largest vessel a Polyscience 7306c unit will heat? Also what is the ratio of water volume to product volume, obviously it will change the cooking times depending on higher quantity? Any help would be greatly appreciated!!!

I believe it is fine heating up to 30 liters of water.
I'm not quite sure what you mean by the water to product ratio, but the pouches have to at least have enough water to circulate around them so you can't stuff it *too* full. Also, in general the amount of food being cooked doesn't increase cooking time at all, it's just the thickness of the individual items.
