Corned beef

In the Modernist Techniques Forum
I am cooking a corned beef for the first time. The cook time says 1-2 days. I know to check the temperature of the water and make sure it is 160 degrees. How can I tell when the meat reaches that temperature? One - two days is a pretty broad window. Can I overcook it?

The meat should reach that temperature in one to two hours, the rest is all about tenderizing the meat. It should be *done* anytime in that 1 to 2 day range. You can read more about why is there a sous vide time range. Thanks
