8 - 10 lb Ham Shank, pre-cooked, frozen

Does it make sense to "defrost" a pre-cooked, frozen Ham Shank sous vide? How long would a 8-10 lb pre-cooked Ham Shank take fresh or frozen? And at what temp?

You normally don't have to defrost foods before cooking them sous vide but something that large might cook a little unevenly if it was put in frozen. In general, you're looking at about 10 to 90 minutes of extra cooking time as the thickness goes from 1" to 3".
