Soy lecithin - Are granules similar to powder?

In the Modernist Recipes Forum

I was trying to find soy lecithin in my local supermarket to try out foaming when I bumped into lecithin in granulated form. I was hesitant to buy as I worry it would not work the same as the powdered form that one could buy from modernist pantry. Has anyone tried granulated form? Is it possible to create foam with it still?

Hi Jeremy, in my understanding the granulated doesn't work as well as the powdered or liquid does. I think it has a coating that prevents it from working as well. Either the powdered or liquid should work well though. I tend to buy mine online from ModernistPantry.com as well.
