Question on the 'pearls' from the Party Foods book

In the Modernist Recipes Forum
I just got the iBooks version of the Modernist Cooking Made Easy: Party Foods book.

Two of the recipes talk about making pearls (Roasted Pabloano Pearls and Curried Carrot Pearls). Both list '1 glass of olive oil' in addition to a weight measurement for olive oil.

Are there any guidelines on what a 'glass' means in this context? Does it need to be a certain depth of liquid to ensure the pearl forms?
