Guinness Air
In the Modernist Recipes Forum
Thought it would be playful and yummy to make an air with Guinness Stout. Used lecithin. Miserable failure. Has anyone ever tried this?

What went wrong with it? Maybe there was too much carbonation present in the Guinness, or was the flavor bad?
This sounds intriguing. I think I'm going to give it a go and see what can go wrong.
OK, I came across the Alinea method for making a foam from beer or ale and it does require cooking the beer and recommends skimming off the foam as it simmers. I assume the foam is the carbonation.
