Guacamole gel

In the Modernist Recipes Forum
Was trying to make a guacamole gel. Problem is I couldn't figure out a way to hydrate either agar or gelatin without cooking the guac. Any ideas. Also, the big difference between agar and gelatin is agar can be used for warmer dishes right? Does either one work better for colder dishes like guacamole? What about gellan gum or cold agar? Your "getting started" book didn't have much on either.
