Adapt Fav Brisket recipe
In the Modernist Recipes Forum
Hello: I have been making Dave Lieberman's Sweet brisket recipe for years and love it. I was wondering, how can i adapt it to Sous vide? Would I cook the meat soud vide with just S&P, and cook the sauce separately , then slice and heat up together?

Yeah, I think I'd pepper it and add a little salt then sous vide it. Make the sauce at the end (maybe reducing the liquid because it won't be simmer for 8 hours), then slice and add them all together.
