Calcium Chloride and Potassium Nitrate / Saltpetre Crystalline Salt
In the Modernist Ingredients and Equipment Forum
I have brought some calcium chloride and Potassium Nitrate / Saltpetre Crystalline Salt to mix with iota carrageenan and kappa carrageenan. I would just like to know if anyone has used these. I have read that they are irritant to skin, eyes and if you breath them in, so once I create a gel using these will that gel be safe to touch if it contains the calcium chloride and Potassium Nitrate / Saltpetre Crystalline Salt.

I'm not sure about the potassium nitrate but I know calcium chloride is used in spherification. However, it has a bitter taste so I'm not sure if it would be good in gels, calcium lactate might be better.
