Sous Vide Tom and Jerry Cocktail Recipe

Ingredients for Sous Vide Tom and Jerry Cocktail

  • For the Tom and Jerry Batter

  • 3 Eggs, whole
  • 225g Sugar
  • .5 oz Jamaican rum .25 tsp Cinnamon, ground .25 tsp Allspice, ground .125 tsp Nutmeg, ground .125 tsp Clove, ground
  • 1 Dash Angostura Bitters
  • 2 Nitrous oxides charges
  • For the Cocktail

  • 2 oz Tom and Jerry Batter
  • 6 oz Whole milk, 70°C
  • .75 oz Cognac .75 oz Jamaican rum
  • Nutmeg, grated garnish

Cooking Instructions for Sous Vide Tom and Jerry Cocktail

For the Tom and Jerry Batter

1. Combine the ingredients in a blender.

2. Blend until smooth and pour into a sous vide bag.

3. Seal and cook at 70°C for 30 min.

4. Pour the contents of the bag into an iSi whipper and charge with 2 charges.

5. Reserve warm.

For the Cocktail

1. Add 2 oz of Tom and Jerry batter to a preheated mug.

2. Add the rest of the ingredients and stir to combine.

3. Garnish with freshly grated nutmeg.
