Sous Vide Aussie Christmas Strudel Recipe

Ingredients for Sous Vide Aussie Christmas Strudel

  • For the Sous Vide Fruit

  • 200grams fresh tart apples - Granny Smith or Golden Delicious combined with the juice of a lemon.
  • 200grams fresh cut rhubarb stalks combined with sufficient strawberry balsamic vinegar & Raspberry vinocotta in equal portions to cover.
  • 100grams Riberry's
  • For the Infused Dried Fruit

  • 200grams combination of dried fruit medley (peaches, sultanas, apples, pears, apricots) with additional dried apricots, dried cranberries and soft dried figs soaked in VSPO French Brandy & 10x vanilla extract.
  • To Finish

  • 1 fresh leaf Strawberry Gum
  • Store-bought puff pastry

Cooking Instructions for Sous Vide Aussie Christmas Strudel

For the Sous Vide Fruit

Combine ingredients in sous vide bag

Cook at 64 Deg. C (147 Deg. F) for minimum of 30 mins - 1hr checking at 30 mins for texture of fruit (note apples will be the determining factor).

Refrigerate until needed.

For the Infused Dried Fruit

Combine all ingredients, vacuum seal for several days in the refrigerator.

To Finish

Preheat oven to 190 Deg. C (350 Deg. F)

2) Combine 1, 2 & 3 above in a mixing bowl.

3) Assemble the strudel by laying down a sheet of puff pastry & spooning in sufficient mix.

4) Wrap pastry over itself making sure to get good tight wrap over fruit mix.

5) Egg wash surface & slice vent holes across pastry & dust with small amount of sugar.

6) Line baking tray with baking paper (or grease tray) & place strudel onto tray.

7) Bake at 190 Deg. C for 30 mins (fan forced) or longer in conventional oven until pastry is

golden brown.

8) Remove from oven and cool for five minutes before plating up.

9) Serve with thick cream or ice cream.

10) ENJOY!
