Sous Vide Brown Bread ...anyone?

I don't foresee a lot of responses on this topic, but I mean to produce the ultimate brown bread and maybe fruitcake if I get success with this. I've made good Brown Bread in a water bath before, so I know it'll come out perfect this way, because the trick is getting it done to the center and to be the same all the way through. Ill use a big can and weigh it down I guess, and start at around 185f, which is a ballpark for low on a crockpot.

Interesting idea. Good luck with that. I'd be interested in the results (and instructions/recipe if it turns out well and you're willing to share).
