I have tried the 72 hour method (at 131 F) but I prefer the flavor of round steak and London Broil at the 24 hour mark. I suggest medium rare, 131 F as the most flavorful and tender meat; if you insist on medium steak, then cook for 23 hours to tenderize at 131 F then dial the temperature up to 139 F for the final 45 minutes to one hour.

What cut is the london broil made of? Flank steak, eye of round? That will depend how long you cook it for. And if you want it medium-rare then cook it at 131-141, for medium 141+.
