The SO-VIDA Sous Vide Weights are the third accessory the company has brought to the sous vide market. The primary purpose of the sous vide weights is to keep sous vide bags from floating to the surface when cooking. This occurs typically with buoyant vegetables, frozen proteins, and when there is too much air in the bag. Any of these can cause the bag to float to the surface, exposing a portion of its contents to the air, and perhaps creating an unsafe situation.

What We Like About the SO-VIDA Sous Vide Weights

This weight, when placed inside the sous vide bag, prevents it from floating. They are constructed of a stainless steel cylinder, encapsulated in a food safe silicone shell, so they do not impart any flavor to the contents of the bag. They are also easy to clean, either in the sink or the dishwasher. One weight is typically enough to hold down a bag, but you can always add a second weight if necessary.

The best part is that they are essentially a "no-brainer" to use.

What We Don't Like About the SO-VIDA Sous Vide Weights

Depending on the method you are using to seal the bag, the weights may occasionally shift around, allowing a portion of the bag to break the surface of the water. Also, if you are going to use the weights to keep frozen food from floating, you will need to freeze the weight with the food. This might require you to purchase a number of the weights.

Why We Recommend the SO-VIDA Sous Vide Weights

Like most sous viders, I have tried numerous methods to keep sous vide bags from floating. Of all of those, sous vide weights are by far the simplest and easiest to use. In most cases, I find weights to be my solution of choice when facing the floating bag challenge.
