The PolyScience Sous Vide Professional Classic is a robust immersion circulator designed for professional kitchens.
PolyScience calls this, "The legendary machine that changed kitchens forever". This is because it is the immersion circulator that helped pioneer the realm of sous vide cooking. It was developed to meet the rigorous requirements of commercial food establishments.
What We Like About the PolyScience Sous Vide Professional Classic
The biggest benefit to the Sous Vide Professional Classic is that it is built for the professional kitchen environment and it is designed to be run 24 hours a day for years. It also heats very quickly and has extremely low temperature variance. With an 1,100 watt heater it can handle baths up to 8 gallons (30 liters).
PolyScience has been designing laboratory and sous vide equipment, and working with professional kitchens, for years and has the expertise to help chefs get set up. Moreover, the PolyScience Classic unit has both ETL commercial and sanitation approvals, making it ideal for commercial applications.

The PolyScience Sous Vide Professional Classic would be an extreme overkill for all but the most avid home cook. The unit is quite large for the typical 10 L water bath used by most home cooks.
